The Sweet History of the Goo Goo Cluster

The Goo Goo Cluster was created by Howard Campbell of the Standard Candy Company in Nashville.

At a time when chocolate bars were fairly simple, Campbell had the idea of combining chocolate with peanuts, caramel, marshmallow, and nougat to create something more filling. The result became America’s first combination candy bar and quickly developed a devoted following.

The unusual name has its own fun story. According to company history, Campbell’s young son had just begun making baby sounds, repeatedly saying “goo goo.” Howard thought the name was memorable, and it stuck.

Years later, Goo Goo Clusters became closely associated with the Grand Ole Opry. Because of the sponsorship, many people assumed “GOO” stood for Grand Ole Opry, although the candy had actually been around for years before that partnership began.

Today, Goo Goo Clusters remain one of Nashville’s most recognizable local treats and continue to be made right here in Music City.

Inside the Goo Goo Experience

Our adventure began inside the Goo Goo Chocolate Co. in downtown Nashville.

The smell of chocolate filled the shop the moment we walked inside.

After checking in, we followed a bright red door into the classroom where our candy-making adventure would begin. Everyone gathered around individual workstations while our instructor introduced himself and shared the story of Goo Goo Clusters.

To make sure we didn’t get hungry while learning, everyone received a sample Goo Goo Cluster to enjoy during the presentation. Not a bad way to start class.

Building Our Own Goo Goo Cluster

Then it was time for the fun part. Hairnets went on. Gloves came out. Naturally, the jokes immediately started about looking like cafeteria workers from elementary school.

Each of us had a chocolate shell waiting on our trays. Now came the difficult decision—which fillings would make the perfect Goo Goo Cluster?

Rows of ingredients stretched across the counter.

Sticky fillings included peanut butter, different kinds of nougat, caramel, and even a bourbon caramel inspired by Tennessee whiskey.

Then came the dry ingredients-chocolate chips, pretzels, sprinkles, toffee, peanuts, and plenty of other toppings.

We each selected two sticky ingredients and three dry ingredients before returning to our stations. There was no question our Goo Goo Clusters were going to be epic.

The first sticky layer was pressed into the bottom of the chocolate shell. Next came the dry ingredients, filling the cup almost to the top. Finally, the second sticky layer sealed everything together before we carried our creations to what everyone had been waiting for—the chocolate waterfall.

Watching warm chocolate pour over our custom candy bars might have been the highlight of the entire class.

After scraping away the excess chocolate, our Goo Goo Clusters were left to cool while we admired everyone else’s creative combinations.

Learning About Chocolate

While our candy hardened, our instructor shifted the focus from candy making to chocolate itself.

We learned how chocolate is grown and processed before tasting several different varieties.

Ruby chocolate offered a fruity sweetness. Golden chocolate had rich caramel notes. Dark chocolate delivered the bold flavor many chocolate lovers prefer.

It was an interesting addition that made the experience feel more than just a candy-making class.

The Best Park- Taking Them Home

Soon our Goo Goo Clusters were ready. With one quick flip of the mold and a gentle tap on the table, our giant candy creations popped free.

Each cluster was carefully packed into a signature red Goo Goo box along with an insulated bag to help protect it on the trip home.

Back in the shop we browsed the shelves filled with every variety of Goo Goo Cluster imaginable, vintage advertisements, gifts, and souvenirs celebrating more than a century of Nashville candy-making history.
